Enjoy warm, comforting lamb
Grass fed lamb is a delicious tender meat. Grass fed animals that are raised on pasture forage and hay in the winter, like ours, tend to have higher Omega 3 fatty acids like CLA, conjugated linoleic acid (think fish oil). According to eatwild.com grass fed meats have higher levels of vitamin E and C and beta carotene. Lamb is high in iron, B12 and zinc. The smaller size animals were a good fit for our limited grazing initially but we really have fallen in love with the benefits of grass fed lamb. Plus, it tastes great!

My son’s favorite leg of lamb
5 lb leg of lamb
4 cloves of garlic, sliced
salt and pepper to taste
2 T fresh rosemary
Preheat the oven to 350 degrees. Cut deep slits on the top of the leg of lamb every 3 to 4 inches; push slices of garlic down into the slits. Generously season with salt and pepper. Place the lamb on a roasting pan and arrange the rosemary under and on top. Roast in the oven for at least 1.75 to 2 hours or until the thermometer reads at least 135 degrees for medium rare to medium doneness. Cover with aluminum foil and let rest 10 minutes before carving.
The Best Classic Shephards Pie Recipe
2 T olive oil
1 cup chopped onion
1 lb ground lamb or beef
2 tsp dried parsley leaves
1 tsp dried rosemary
1 tsp dried thyme leaves
1/2 tsp ground black pepper
1 T Worcestershire sauce
2 cloves garlic, minced
2 T flour
2 T tomato paste
1 cup beef broth
1 cup frozen mixed peas and carrots
1/2 cup frozen corn
Potato topping:
1.5 to 2 lbs russet potatoes cut in 1” cubes
8 T butter
1/3 cup half and half
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp pepper
1/4 cup parmesan cheese
Saute the onions in the oil in a large skillet. Cook about 5 minutes. Add the meat and break apart with a spoon. Add the parsley, rosemary, thyme, salt and pepper. Stir well and cook for 6-8 minutes until the meat is browned. Add the Worcestershire sauce and garlic. Stir and cook about 1 minute. Add the flour and tomato paste. Stir until well incorporated and no clumps of tomato paste remain. Add the broth, frozen peas, carrots and corn. Bring to a boil and reduce to a simmer. Simmer 5 minutes then set aside and heat oven to 400 degrees. Cook the potatoes until fork tender, about 10-15 minutes. Drain the potatoes and return to hot pot. Add butter, half and half and garlic powder along with salt and pepper. Mash and stir until combined. Add the cheese and stir. Pour the meat in a 9x9 inch dish and bake uncovered in the oven for 25-30 minutes. Cool about 15 minutes before serving.
Easy Lamb Meatballs-A great appetizer for the Packer game!
1 lb. ground lamb
2 tablespoons Greek yogurt or sour cream
1 tablespoon fresh garlic minced
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon onion powder
1 teaspoon ground cumin
½ cup cilantro chopped
2 tablespoons olive oil
Instructions
In a medium bowl, mix together all the ingredients except for the oil.
Using a 1.5-tablespoon cookie scoop, scoop out even portions of the mixture into a plate. I usually end up with 16 meatballs.
With wet hands for easier handling, shape each portion into a round meatball.
Heat the olive oil in a very large (14-inch) lidded skillet over medium-high heat until the oil shimmers and becomes fragrant, about 2 minutes.
Add the meatballs in a single layer and cook, turning frequently, until golden brown, 5 minutes. If the oil becomes too hot, lower the heat to medium.
Add ¼ cup of water to the bottom of the skillet. Cover with the lid and cook the meatballs until they are cooked through, about 2-3 more minutes.
Remove the meatballs from the skillet to a serving plate using a slotted spoon. Serve immediately.
If you'd like to make a quick yogurt sauce to go with the meatballs, mix ½ cup whole-milk plain Greek yogurt with 2 tablespoons chopped dill weed, 1 teaspoon minced fresh garlic, and ¼ teaspoon Kosher salt.
To ensure light and fluffy meatballs rather than dense and heavy ones, try to handle them lightly and minimally, both when working the spices into the meat and when shaping them.
