Get your soup on!
Soup season is officially here and I love it! I love that soup is usually easy to make, its filling and 1 batch can often feed us for multiple meals. I wanted to share some of my family’s favorite soup recipes for you to also enjoy. Stay warm out there!
Cream of Wild Rice Chicken Soup
3 cups cooked wild rice
1 large onion, finely diced
1 carrot, finely diced
1 rib celery, finely diced
1 cup diced chicken, cooked
1/2 cup butter
1/2 cup flour
8 cups chicken broth
salt and pepper to taste
1 cup light cream or half and half
Prepare the wild rice. In a 4 to 5 quart soup kettle, saute the onion, carrot and celery in the butter about 3 minutes or until the veggies have softened slightly. Sift the flour and add to the butter-veggie mixture a little bit at a time, stirring and cooking until the flour is blended in well, but do not let it brown. Slowly add the chicken broth, stirring until all the flour-butter-veggie mixture is well blended. Add the wild rice; adjust seasonings as desired. Heat thoroughly. Add the cream and reheat gently, but do not boil. Serves 10-12.
Zuppa Tuscana
1/2 lb Italian Sausage
10 cups chicken broth
1 cup heavy cream
1/2 tsp crushed red pepper
1/2 large onion
4 tablespoons bacon pieces
2 tsp garlic
3 large baking potatoes, peeled and chopped
1/4 bunch kale
Cook sausage in large pot, add crushed red pepper and drain excess fat. Remove from pot. Fry bacon, onion and garlic until onion is soft. Remove. Heat the broth until boiling. Add the chopped potatoes and cook until soft, about a half hour. Add the cooked sausage, cream, bacon, onion and garlic and cook until reheated through on low to medium heat. Add kale just before serving.
